With zucchini in abundance in home gardens, farmers markets and grocery stores, new zucchini recipes are in high demand. Meatballs are always a fan favorite, so we wondered why you couldn't put zucchini into a meatball. Well, you can and it is super tasty. These Italian zucchini meatballs are destined to be on repeat for dinner.
These juicy, tender zucchini meatballs require only a few ingredients. Here is your shopping list: zucchini (check out the health benefits of zucchini), ground turkey (you could use ground beef or ground chicken), onion, Parmesan cheese, breadcrumbs, an egg, garlic, Italian seasoning and olive oil to fry them up in. The ingredients are mixed together, formed into balls and pan-fried.
Use these low-sugar, high-protein meatballs for spaghetti and meatballs or other pasta recipes, meatballs casseroles or serve them as is with your favorite side dishes. The meatballs can be frozen, too. Put the raw or cooked meatballs onto a cookie sheet, freeze and then pop them into a freezer bag. Be sure to check out the health benefits of protein.

Ingredients
- 1 cup zucchini, grated
- 1 pound ground turkey (or ground beef)
- 1 small onion, grated with juice
- 1/4 cup freshly grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 egg
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil, for frying (more if needed)
Here's how to make it:
- Put the grated zucchini onto a paper towel and squeeze out as much moisture as you can. Use another paper towel, if needed.
- Combine all the ingredients in a mixing bowl. Season well with salt and pepper. Shape into meatballs. (Be sure to get the onion juice into the bowl when grating the onion. The juice adds even more moistness and flavor.)
- Heat the olive oil in a large skillet. Add the meatballs and cook until golden on all sides and cooked through, about 10 to 15 minutes. Cooking time will vary depending on how big you make the meatballs. (Double the recipe and freeze some meatballs for later.) Store the meatballs in an airtight container in the fridge and reheat in the microwave or simmer in sauce.
