Ingredients
- 14 ounces (1 can) black beans, drained and rinsed
- 1 mango, diced
- 10 ounces (1 bag) frozen white corn, defrosted, or 14 ounces (1 can) whole kernel corn
- fresh chopped cilantro, to taste
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- juice from 1 lime, or to taste
- 1/2 a small white onion, diced
- 1 tomato, diced
Recipe Notes
- Don't like mango? Leave it out or use peaches, nectarines or your favorite stone fruit.
- Store the salsa in an airtight container in the fridge.
Here's how to make it:
- In a large bowl, mix all ingredients together.
- Squeeze the juices from the core of the mango for added flavor.
- Chill for an hour before serving, then serve as a side dish or with tortilla chips for a dip.
