So that's exactly what I did in this crispy high-protein Mediterranean chicken patties recipe. The spinach, feta and dill combine with ground chicken to make a seriously tasty dinner.
These wholesome chicken patties are crispy on the outside and moist and tender on the inside. The nourishing chicken patties offer the health benefits of spinach, the health benefits of dill and the health benefits of bell peppers, among others. Plus, feta cheese is among the world's healthiest cheeses. I love that this delicious chicken patties recipe is a flavorful addition to a nutritious Mediterranean Diet.
Here are the simple ingredients you need to make this gluten-free recipe: ground chicken, onion, orange bell pepper, fresh spinach, an egg, feta cheese, fresh dill, almond flour and extra virgin olive oil, for frying. First, you combine the ingredients to form the patties. Next, you cook the savory Mediterranean patties in a skillet until they're crispy and golden. So easy to make and ready for dinner in only about 30 minutes. Perfect for any day of the week!
I served these fun chicken patties for lunch – with and without a bun – for a memorable meal. They're extra delicious when served with your favorite sauce (I think tzatziki sauce is always a great choice)!

Ingredients
- 1 pound ground chicken
- 3/4 cup onion, diced
- 3/4 cup orange bell pepper, diced
- 6 ounces fresh baby spinach, diced or torn into small pieces
- 2 tablespoons fresh dill, diced
- 1 egg
- 6 ounces feta cheese, crumbled
- 1/2 cup almond flour
- 2 tablespoons extra virgin olive oil, for frying
Here's how to make it:
- In a large mixing bowl, add all ingredients except the olive oil. Season with sea salt and black pepper, to taste, if desired. Stir to combine and form into a soft mixture. (Instead of almond flour, you can use panko breadcrumbs, if desired. Just be sure to use gluten-free panko if you'd like the patties to be gluten-free.)
- Using your clean hands, form the mixture into patties. In a nonstick or cast iron skillet over medium-high heat, add enough olive oil to coat the bottom of the pan. Place patties into the skillet and cook (in batches, if needed) patties until they're crispy and golden brown, about 5 to 6 minutes. (Feel free to add more olive oil, as needed. The number of patties will depend on how big you make each patty. If you want to make chicken burgers, then make your patties larger to fit a bun.)
- Flip patties and cook until crispy and golden on the other side, another 5 to 6 minutes, or until desired doneness. Chicken is done when it reaches 165 degrees F on a food thermometer.
- Serve warm, with or without buns, with your favorite sauces and side dishes. Store leftovers in an airtight container in the refrigerator. Reheat in the microwave or, for maximum crispiness, in a skillet or in the oven.
