This brunch or breakfast casserole recipe uses frozen hash browns, but you can also use cooked potatoes if you have any leftover. You can easily add cooked vegetables or another cheese if you prefer. This baked egg casserole is really an easily adaptable recipe that you can have fun with to make it your own.
To make this high-protein casserole recipe you will need the following simple ingredients from your fridge and pantry: frozen hash browns (shredded or diced), olive oil, breakfast meats (sausage, bacon or your favorite), eggs, whole milk, kosher salt, dried Italian seasoning, black pepper and cheddar cheese.

Ingredients
- 16 ounces (1 bag) frozen diced or shredded hash browns
- 1/2 tablespoon olive oil
- 16 ounces breakfast sausage (or Italian sausage, casings removed, or 12 ounces bacon, cooked, or any combination of breakfast meats)
- 12 large eggs
- 2 cups whole milk
- 1 1/2 teaspoons kosher salt
- 1 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- 8 ounces sharp cheddar cheese, grated
- fresh scallions or chives, chopped, for serving (optional)
Here's how to make it:
- Place the frozen hash browns in the bottom of a greased 13x9-inch baking dish (or similar size), breaking up the pieces to thaw a bit.
- Heat the olive oil in a skillet on medium. Add the sausage and cook until done. Transfer to paper-towel lined plate. (If you are using bacon just cook the slices until well done and break into pieces.)
- Place the eggs, milk, salt, pepper and Italian seasonings in a large bowl. Whisk together.
- Place the sausage and/or bacon on top of the hash browns.
- Top with the cheese. Toss gently to combine.
- Pour the egg mixture over the hash browns, making sure the potatoes are completely covered.
- Bake in a preheated 350-degree F oven for 45 to 50 minutes. The top will be browned and the edges set.
- Cool for 10 minutes before cutting. Top with the scallions, if desired, and enjoy!
