I love a good high-protein breakfast, but sometimes I don’t have time to prepare one. That’s when these grab-and-go high-protein egg bites come in really handy! These delicious egg bites have a huge punch of extra protein with the addition of cottage cheese. I love to double this breakfast recipe so that I can just grab a few, reheat them and I’m ready for a quick nutritious and protein-packed start to my day.
To make this high-protein recipe you will need the following gluten-free ingredients: eggs, cottage cheese, fresh spinach, red bell pepper and green onions (scallions). Not only do you get the health benefits of protein, but the health benefits of eggs, the health benefits of cottage cheese, the health benefits of spinach, the health benefits of red bell peppers and the health benefits of green onions. Not bad for a little breakfast egg cup!
Variation: If you don’t want red peppers and spinach feel free to substitute your favorite vegetables to make these grab-and-go high-protein egg bites exactly what you want.

Ingredients
- 6 large eggs
- 3/4 cup cottage cheese (full fat)
- 3 cups fresh spinach, finely chopped
- 1/2 cup roasted red bell pepper, diced (about 1 pepper)
- 1/2 cup green onion, chopped (about 2 green onions)
Here's how to make it:
- Place eggs, cottage cheese, a good pinch of salt (I used about 1/4 teaspoon) and several grinds of fresh black pepper into a blender.
- Blend until smooth.
- Stir together the spinach, peppers and onions in a mixing bowl.
- Divide the mixture between 12 greased (I used olive oil) muffin cups.
- Pour the egg mixture over the top of the vegetables.
- Bake in a preheated 350-degree F oven for 18 to 22 minutes, or until eggs are firm and browned on top. Remove from the oven and let cool at least 5 minutes before removing from the pan. Serve. Store the egg bites in an airtight container in the fridge.
