- 12 ounces all-purpose flour or gluten-free 1:1 flour (about 3 cups)
- 1 1/2 tablespoons baking powder
- 1/2 teaspoon fine salt

- 12 ounces self-rising flour (about 3 cups)
- 2 cups sour cream
- 1 cup salted butter, softened (2 sticks)
Here's how to make it:
- In a medium bowl add the flour, sour cream and soft butter. (If you are making your own self-rising flour just mix the ingredients well before combining them with sour cram and butter.)
- Stir to combine. The mixture will be very lumpy. (If it’s too dry you can add 1 additional tablespoon of soft or melted butter or 1 additional tablespoon sour cream.)
- Use a spoon to fill 24 mini muffin cups that have been sprayed with nonstick cooking spray (or use baking liners). Put the muffin tins on a baking sheet.
- Bake in a preheated 375-degree F oven for 20 to 25 minutes, or until the biscuits are golden brown.
- Remove from the oven and serve immediately. Store any leftover rolls in an airtight container.
