Ingredients
- 1 cup peanut butter (crunchy or creamy peanut butter, not the all-natural kind), at room temperature
- 1/2 cup granulated sugar
- 1 teaspoon baking soda
- 1 large egg
- 1/2 cup semisweet chocolate chips (or milk chocolate chips or dark chocolate chips, or 12 Hershey's Kisses, or 12 mini Reese's peanut butter cups)
Here's how to make it:
- In a large mixing bowl, add the peanut butter, sugar, baking soda and egg. Mix well to thoroughly combine. (I used a sturdy fork, but you also could use an electric mixer or hand beaters. You can use crunchy or creamy peanut butter, but regular peanut butter works better than the all-natural kind.)
- Using your clean hands, form dough into balls that are about 1 1/2 inches each and drop them into a muffin tin that's been sprayed with cooking spray. Press the dough until it's evenly distributed into each muffin cup (each cup should be about halfway filled).
- Evenly distribute the chocolate chips into the well of each cup. (You can use the chocolate chips of your choice. Alternatively, you could use Hershey's kisses or mini Reese's peanut butter cups.)
- Bake in an oven that's been preheated 350 degrees F oven until cookies are lightly brown, about 10 to 12 minutes. Do not over-bake.
- Allow cookies to cool for a few minutes before transferring to a wire rack to cool completely.
- Serve. Store leftover cookies in an airtight container.
