Here's how my trip to Costco usually goes: I do my walk around the store, always passing the rotisserie chickens and saying that all my meals are planned for the week, so I am not buying one of the huge, juicy $4.99 chickens that smell fabulous. After loading my basket with what I plan to buy and heading toward the checkout, I make a U-turn and head back to the chickens under the heat lamp, grab one and wonderful why I have no self-control when it comes to Costco rotisserie chickens. My last trip to Costco, however, was for the sole purpose of buying a chicken and making this viral Costco fried rice recipe.
This high-protein chicken fried rice recipe went viral, and for good reason. This is the best and most successful viral recipe I've ever made. Quick, easy, minimal prep and the fried rice is rich, savory and loaded with umami flavor. This is one fried rice shortcut recipe you need to try ASAP.
To make this easy fried rice recipe you will need the following simple ingredients and about 10 minutes. Here is your short shopping list: a rotisserie chicken (and all the juices in the bottom of the bag), cooked rice (jasmine is preferred), green onions (scallions), oyster sauce, sesame oil, soy sauce (or tamari for a gluten-free recipe) and granulated sugar.
This savory, high-protein fried rice loaded with chicken and green onions (check out the health benefits of green onions and the health benefits of protein) is a quick dinner with your favorite side dishes or a side dish with another protein (double up on that protein!). I served mine with vegetable spring rolls for a fantastic dinner that had almost no dishes to wash afterwards. This is a great meal-prep recipe, too.

Ingredients
- 2 cups shredded rotisserie chicken (from a Costco rotisserie chicken)
- 2 cups cooked rice, hot (I used precooked jasmine rice)
- 2 - 4 green onions (scallions), chopped
- 1 tablespoon oyster sauce (heaping)
- 1/2 teaspoon sesame oil
- 2 teaspoons soy sauce (I used low-sodium soy sauce)
- 2 teaspoons granulated sugar
Here's how to make it:
- Take the rotisserie chicken out of the bag, leaving all the juices at the bottom of the bag.
- Shred the chicken. (I used half of the chicken for the rice and saved the other half for dinner the next night.)
- Stir the oyster sauce, sesame oil, soy sauce and granulated sugar into the chicken juices. (For a gluten-free dish, use tamari instead of soy sauce. If you don't have or can't find oyster sauce, use hoisin sauce instead.)
- Add the rice, chicken and green onions. Season with salt and black pepper, if desired. (I added just a pinch of salt and lots of black pepper.)
- Seal the bag and shake well to combine all the ingredients. Taste and add more seasonings, if needed.
- Serve directly out of the bag or pour into a serving bowl. (If the rice and chicken are not as hot as you'd like, pop the bag into the microwave for a minute or two.) Store any leftovers in the sealed bag or put them into an airtight container. Reheat in the microwave.
