Ingredients

• 1/2 cup unsalted butter, softened (if you use salted butter then omit the added salt)
• 1 cup brown sugar, packed
• 3 tablespoons granulated sugar
• 1 egg
• 2 teaspoons vanilla extract
• 1 3/4 cups all-purpose flour or gluten-free flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 1 1/2 teaspoons instant espresso coffee powder
• 1 1/2 cups semisweet chocolate chips

Here's how to make it: 

1. In a medium mixing bowl, add butter and both sugars. Blend with a stand mixer or hand mixer until smooth.
2. Mix in the vanilla and egg.
3. Blend in the flour, baking soda and powder, salt and espresso powder.
4. Fold in the chocolate chips by hand and mix until well combined.
5. Drop batter (about 3 tablespoons per cookie) onto a greased cookie sheet, leaving a few inches in between the cookies.
6. Bake in a preheated 375 degree F oven for about 8 to 10 minutes, or until the cookies are baked to your desired crispiness. (Add 2 minutes if you like crisp cookies.)
7. Remove from the oven and cool on a wire rack for a few minutes before serving. Enjoy! Store the cookies in an airtight container to keep them fresh.
