Despite the health benefits of brussels sprouts, the cruciferous vegetable seems to always come in last. According to the International Fresh Product Association, brussels sprouts ranks last (#20) on their list of the top 20 fruits and vegetables sold in the U.S. Maybe this easy Asian ground beef and brussels sprouts recipe will change that.
This quick and easy ground beef stir fry recipe lets brussels sprouts shine. The Asian-inspired recipe has simple prep and cooks up in about 10 minutes. Here is your shopping list for this ground beef recipe: fresh brussels sprouts, olive oil, ground beef, green onions, garlic powder, low-sodium soy sauce or tamari (tamari is gluten-free), sriracha sauce and sweet chili sauce. Serve the savory ground beef and brussels sprouts over rice, Chinese noodles or rice noodles. Ingredients
- 1 pound brussels sprouts, shredded or cut in half
- 1 tablespoon olive oil
- 1 pound ground beef
- 4 green onions, chopped
- 1/2 teaspoon garlic powder
- 2 tablespoons low-sodium soy sauce or tamari
- 1/2 - 1 teaspoon sriracha (or to taste)
- 1/2 cup sweet chili sauce
Here's how to make it:
- Heat the olive oil in a large skillet or wok over medium heat. Add the brussels sprouts. (You could use sesame oil instead of olive oil. I shredded half of brussels sprouts and cut the others in half.)
- Cook, stirring often, until they begin to soften and lightly brown, about 5 minutes.
- Add the ground beef, green onions, soy sauce or tamari, sriracha and garlic powder. (For a gluten-free dinner, use tamari instead of soy sauce.)
- Cook, stirring to break up the meat, until meat is cooked through, about 5 minutes. Season with salt and black pepper.
- Pour in the sweet chili sauce.
- Stir to combine. Taste and add more salt and pepper, if needed.
- Serve over rice or noodles and garnish with chopped green onions and sesame seeds, if desired. Store any leftovers in an airtight container and reheat in the microwave.
