Ground Beef Broccoli Stir-fry Recipe Is a High-Protein Dinner Fast (25 Minutes) High Protein Recipes Asian Recipes Beef Budget Recipes Dinner Gluten-free
My freezer is full of ground beef, so I'm always looking for new ground beef recipes. We love Asian beef broccoli, so it was a no-brainer to make this quick and easy ground beef broccoli stir-fry recipe. The budget recipe has minimal prep and cooks up in no time in one pan. Dinner perfection!
To make this easy, high-protein stir-fry recipe you need ingredients that are probably already in your fridge and pantry. Here is your short shopping list: cooking oil, fresh broccoli (broccoli is loaded with health benefits), onion, ground beef, low-sodium soy sauce, brown sugar, cornstarch, garlic, fresh ginger and rice vinegar.
Cooking Tip: When I first saw how much sauce was poured into the pan, I decided next time I'd reduce it to 3/4 cup. My husband loved how "juicy" this dish was, so I will leave it at 1 cup.
The broccoli and ground beef are coated in a slightly sweet brown sauce that's full of Asian flavors. Serve this beef broccoli over white rice, brown rice, jasmine rice, quinoa, noodles or whatever you'd like. You could even eat it as-in with crispy eggrolls on the side.
Cuisine: Asian / American
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 4
Ingredients
- 1 tablespoon cooking oil
- 4 - 5 cups broccoli florets
- 1 small onion, sliced (optional)
- 1 pound lean ground beef
Sauce
- 1 cup water
- 6 tablespoons low-sodium soy sauce
- 3 tablespoons brown sugar, packed
- 1 tablespoon cornstarch
- 4 cloves garlic, minced or pressed
- 1 tablespoon minced fresh ginger
- 2 teaspoons rice vinegar
Here's how to make it:
- Whisk together all the sauce ingredients. Set aside. (For a gluten-free dinner, use tamari instead of soy sauce. For a little spice, add in some crushed red pepper flakes.)
- Heat the cooking oil in a large skillet. Add the broccoli and onion, if using, and cook, stirring often, until crisp-tender or desired tenderness, about 5 to 7 minutes. Remove to a plate. (I used olive oil, but you could use sesame oil for even more flavor. If you like softer broccoli, add about 1 tablespoon of water when cooking the broccoli to help it soften faster.)
- Add the ground beef to skillet and cook until browned and cooked through. Season with a little salt and pepper, if desired. (Try this recipe with ground turkey or ground chicken instead of ground beef.)
- Pour in the sauce.
- Cook until the sauce starts to thicken, about 3 minutes.
- Add the broccoli back into the pan.
- Stir to combine.
- Serve over rice, noodles or your favorite grain, if desired.
- Store any leftovers in an airtight container and reheat in the microwave.
