Ingredients
Biscuits
- 2 1/2 cups all-purpose flour or gluten-free 1:1 flour
- 1 tablespoon baking powder
- 3/4 teaspoon kosher salt (omit if using salted butter)
- 1/2 teaspoon baking soda
- 1 tablespoon granulated sugar
- 8 tablespoons unsalted butter, melted (divided)
- 2 cups buttermilk
- 3/4 cup fresh strawberries, chopped (washed and dried well)
Drizzle
- 1/2 cup powdered sugar
- 1 tablespoon buttermilk
Here's how to make it:
- In a large bowl add the flour, sugar, salt, baking powder and baking soda. Use a fork or whisk to combine.
- Add the buttermilk and 3 tablespoons of melted butter to the flour mixture. Blend with a fork. Mix until most of the ingredients are incorporated but some dry patches remain.
- Gently add the strawberries into the batter.
- Pour the balance of the melted butter into an 8x8-inch baking pan and swirl it over the sides and bottom. Use a rubber spatula to scrape the dough into the pan on top of the butter and spread it to cover the bottom of the dish. Using a dough scraper or knife cut the biscuit dough into 9 servings.
- Bake in a preheated 450-degree F oven for 30 to 35 minutes. Check them at 25 minutes and if they are too brown just cover the pan with foil loosely until they finish baking. Cool the biscuits on a wire rack for 5 minutes.
- To make the drizzle, combine the powdered sugar and buttermilk. (If the drizzle seems too thick you can add another teaspoon of buttermilk to thin to a consistency you like.) Drizzle over the biscuits and serve immediately or store in an airtight container in the fridge for up to three days.
