When I think of brownies I think of chocolate, but these lemon brownies convinced my family that you don’t need chocolate to really satisfy a sweet tooth. This light lemon brownies recipe is not too sweet, and the glaze adds just the right amount of additional sweetness to make this a dessert you will make again and again.

These lemon brownies take only 30 minutes to make and bake, but you’ll have to be a bit patient to cool them before adding the glaze. Ingredients

Lemon Brownies

• 1/2 cup unsalted butter, melted and cooled slightly
• 1/3 cup granulated sugar or coconut sugar
• 1/4 cup powdered sugar
• 2 eggs, at room temperature
• 1 large lemon, zested and juiced
• 2 teaspoons vanilla extract
• 1 cup flour (all-purpose or gluten-free flour)
• 1/2 teaspoon baking powder

Glaze

• 1 cup powdered sugar
• 1 - 2 tablespoons milk (dairy or non-dairy both work)

Here's how to make it: 

1. Combine the butter, granulated sugar, powdered sugar, lemon zest, lemon juice and vanilla in a mixing bowl. Stir to combine. Add the flour and baking powder and mix into a sticky batter.
2. Use a spatula to spread the batter into a parchment paper-lined 8x8-inch baking pan.
3. Bake in a preheated 350-degree F oven for 15 to 18 minutes, or until a toothpick comes out clean. Set aside to cool completely (about 30 minutes).
4. Make the glaze by mixing the powdered sugar and milk together.
5. When the brownies are cool, drizzle the glaze on the brownies using as much as you desire.
6. Cut into squares and enjoy!
7. Store the brownies in an airtight container to keep them fresh.
