It's no secret that I occasionally like to order meals from a meal delivery service. These meal kits are a fun and easy way to discover new recipes and explore new flavors. This smashed pork dumpling tacos recipe was inspired by a meal from EveryPlate. The fusion recipe was full of wonderful Asian flavors all wrapped up in a tortilla. Can you say yum?

While there are three components to this pork recipe, it comes together very quickly and cooks up in less than 15 minutes. Here is your shopping list if you want a little Asian-Mexican fusion in your life: a cucumber, rice vinegar, granulated sugar, fresh garlic, fresh ginger, green onions, sesame seeds, crushed red pepper flakes, soy sauce, sweet chili sauce, ground pork and flour tortillas.

Ingredients

Pickled Cucumber

• 1 small cucumber, finely chopped
• 1 tablespoon rice vinegar
• 1/2 teaspoon granulated sugar

Sesame Chili Sauce

• 1 clove garlic, minced
• 1/2 tablespoon fresh ginger, mined or grated
• 1 green onion, chopped (use just the white part and the remaining for serving)
• 1 teaspoon sesame seeds
• 1 teaspoon crushed red pepper flakes (EveryPlate uses Korean chili flakes)
• 2 tablespoons soy sauce (I used low-sodium soy sauce)
• 3 teaspoons rice vinegar
• 1/4 cup sweet chili sauce
• 3 tablespoons water

Dumplings

• 10 ounces ground pork
• 1 tablespoon fresh ginger, minced
• 1 clove garlic, minced
• 2 green onions, chopped fine
• 2 tablespoons soy sauce
• crushed red pepper flakes, to taste
• 1/2 teaspoon salt (or to taste)
• 4 flour tortillas

Here's how to make it: 

1. To make the pickled cucumber, combine the cucumber, rice vinegar and granulated sugar in a small bowl. Season with salt and pepper, if desired. Set aside.
2. To make the sesame chili sauce, heat a drizzle of cooking oil in a saucepot over medium heat. Add the garlic, ginger, green onion, crushed red pepper flakes and sesame seeds. Cook, stirring, about 30 seconds.
3. Add the soy sauce, rice vinegar, chili sauce and water. Cook, stirring often, until it simmers. Turn off the heat and set aside.
4. Combine all the pork dumpling filling in a mixing bowl. (I added a little black pepper.)
5. Shape the mixture into four meatballs. Put two tortillas onto a work surface. Put a meatball into the center of each tortilla.
6. Gently press the meat mixture to flatten and cover the tortillas. Leave a border around the tortilla.
7. Repeat with the remaining tortillas.
8. Heat a drizzle of cooking oil in a large skillet. Carefully place the tortilla, meat side down, into the skillet. (Do one or two at a time, depending on the size of your skillet.) Cook over medium heat until pork is cooked through and browned, about 2 to 3 minutes.
9. Carefully flip the tortilla over and cook another 1 to 2 minutes. Repeat with remaining tortillas.
10. To serve, top the tacos with the pickled cucumber and drizzle with the sesame chili sauce. Garnish with additional sesame seeds and green onions, if desired. To eat, fold the tortilla over to create a taco.
