Ingredients

• 1 cup all-purpose flour (or gluten-free flour)
• 3/4 cup cocoa powder (preferably dutch-processed)
• 3/4 teaspoon kosher salt
• 1/2 teaspoon baking powder
• 1/2 teaspoon baking soda
• 10 tablespoons unsalted butter, at room temperature
• 3/4 cup dark brown sugar
• 2/3 cup granulated sugar
• 1 large egg
• 2 teaspoons vanilla extract
• 2 cups chocolate chips (semisweet or bittersweet)

Here's how to make it: 

1. Whisk together the flour, cocoa powder, kosher salt, baking powder and baking soda in a mixing bowl. Set aside. (For gluten-free cookies, use gluten-free flour.)
2. In another large mixing bowl, use an electric mixer to blend butter, brown sugar and granulated sugar together until light and fluffy, about 3 to 4 minutes.
3. Add egg and vanilla to sugar mixture and mix well.
4. Add the dry ingredients to the wet ingredients. Mix on low until all the dry ingredients are combined.
5. Stir in the chocolate chips by hand to combine.
6. Wrap the dough in plastic wrap and place in the fridge for 24 or up to 36 hours.
7. When you are ready to bake the cookies, preheat the oven to 350 degrees F and place a piece of parchment on a large baking sheet. Roll dough into large golf ball-size portions and place five on the baking sheet.
8. Bake for 16 to 18 minutes. You want to take the cookies to still be soft in the middle when you take them out of the oven. Cool on a rack and then repeat with the remainder of the dough.
9. Serve warm and enjoy! Store the cookies in an airtight container to keep them fresh.
