Strawberries are in season! My farmers market had bushels of these red gems, and I couldn’t wait to try some new strawberry recipes like this strawberry limeade with ginger and fresh mint.
This strawberry ginger limeade recipes works just as well for a mocktail as a refreshing cocktail, with minimal fuss and a beautiful presentation. The great news about this strawberry beverage recipe is even when those fresh strawberries leave us, you can still make the recipe by substituting frozen strawberries, which are available year-round. We drank this refreshing strawberry mocktail in the yard on a warm day.
To make this strawberry ginger limeade mocktail recipe you will need to gather the following ingredients: limes for juicing and zesting, honey, fresh ginger, fresh mint leaves and fresh strawberries. For an adult-only cocktail, grab either vodka, tequila or rum.

Ingredients
- zest from 2 large limes
- 1 1/2 cups lime juice (from 12 to 14 large limes)
- 3/4 cup honey
- 1 piece fresh ginger, peeled and chopped (about 3 inches)
- 1 cup mint leaves (divided)
- 1 pint (2 cups) strawberries, washed and tops cut off (or 2 1/2 cups frozen strawberries, defrosted)
- vodka, tequila or rum (optional)
Here's how to make it:
- Put the ginger, 3/4 cup of the mint leaves, the zest from the limes and 1/2 cup water into a blender. Blend on a high speed until combined.
- In a large pitcher add 4 cups of water, honey and the lime juice. Stir.
- Place a fine mesh strainer on top of the pitcher and add the blender ingredients to it (mint zest, ginger and water). Use clean hands or a rubber spatula to press out all the liquid into the pitcher.
- Without cleaning the blender, add strawberries and 1/2 cup water and blend on high speed.
- Pour the strawberry mixture through the strainer into the pitcher and again press out all the liquid. Taste the limeade to see if you desire more honey.
- To serve, pour over ice and, if desired, add a shot of alcohol to each glass. Top with a sprig of mint and enjoy this refreshing summer drink!
