To make these crave-able gluten-free potatoes, you'll need these wholesome ingredients: potatoes, extra virgin olive oil, minced garlic, onion powder and fresh rosemary. You coat the potatoes in the rosemary mixture then roast them until they're crispy and golden. So simple!

Ingredients
- 1 1/2 pounds fingerling potatoes, sliced in half
- 2 tablespoons extra virgin olive oil
- 4 cloves (about 4 teaspoons) garlic, minced
- 1/2 teaspoon onion powder
- 3 tablespoons fresh rosemary
Here's how to make it:
- In a small mixing bowl or measuring cup, add the olive oil, garlic, onion powder and rosemary. Season with salt and black pepper, to taste, if desired. Whisk to blend.
- In a large mixing bowl, add the potatoes. Pour the rosemary mixture over the potatoes and toss until potatoes are coated in the mixture. (I used a bag of colorful fingerling potatoes, but you could use small Yukon gold, marble or red potatoes, too.)
- Evenly spread the potatoes into a 13x9-inch baking dish. Sprinkle with additional salt and pepper, if desired.
- Bake in a preheated 400-degree F oven for about 60 minutes, stirring once or twice during baking to ensure even roasting, until crispy and golden. Remove from oven and serve immediately. Store leftovers in a container in the refrigerator and reheat in the oven for maximum crispiness.
