Here is your shopping list for this shortcut recipe: olive oil, onion, a beef chuck roast, a can of low-sodium beef broth, a can of condensed French onion soup, Worcestershire sauce, cornstarch, salt and black pepper. The beef tips simmer gently on the stove until they are fork tender and juicy. The gravy is rich and savory, and smells amazing.

Ingredients

• 2 tablespoons olive oil
• 1 onion, chopped
• 1 beef chuck roast (about 2 pounds), cut into small bite-sized pieces
• 10.5 ounces (1 can) low-sodium beef broth
• 10.5 ounces (1 can) French onion soup 
• 1 tablespoon Worcestershire sauce
• 3 tablespoons cornstarch
• 1/3 cup water

Here's how to make it: 

1. Season the beef pieces with salt and black pepper, to taste. Heat the olive oil in a large soup pot or dutch oven over medium-high heat. Add the beef in batches (don't crowd the pan) and brown on all sides. Remove to a plate. 
2. Add the onion and cook until soft, about 5 minutes. 
3. Add the beef back to the pot along with the broth, soup and Worcestershire sauce. Bring to a boil, reduce heat, cover and gently simmer for 1 1/2 to 2 hours, or until the beef is tender. (For even more flavor, you would add minced fresh garlic or a bay leaf to the pot while it simmers.)
4. In a small bowl, whisk together the cornstarch and water. Whisk into the beef and cook a minute more or until it thickens the gravy. Taste and add salt and black pepper, to taste.
5. Serve over mashed potatoes, egg noodles, rice or your favorite grain. Store any leftovers in an airtight container in the fridge. Reheat on low in a saucepot on the stove or in the microwave.
