- 2 tablespoons olive oil
- 1 onion, chopped
- 1 beef chuck roast (about 2 pounds), cut into small bite-sized pieces
- 10.5 ounces (1 can) low-sodium beef broth
- 10.5 ounces (1 can) French onion soup
- 1 tablespoon Worcestershire sauce
- 3 tablespoons cornstarch
- 1/3 cup water
Here's how to make it:
- Season the beef pieces with salt and black pepper, to taste. Heat the olive oil in a large soup pot or dutch oven over medium-high heat. Add the beef in batches (don't crowd the pan) and brown on all sides. Remove to a plate.
- Add the onion and cook until soft, about 5 minutes.
- Add the beef back to the pot along with the broth, soup and Worcestershire sauce. Bring to a boil, reduce heat, cover and gently simmer for 1 1/2 to 2 hours, or until the beef is tender. (For even more flavor, you would add minced fresh garlic or a bay leaf to the pot while it simmers.)
- In a small bowl, whisk together the cornstarch and water. Whisk into the beef and cook a minute more or until it thickens the gravy. Taste and add salt and black pepper, to taste.
- Serve over mashed potatoes, egg noodles, rice or your favorite grain. Store any leftovers in an airtight container in the fridge. Reheat on low in a saucepot on the stove or in the microwave.
