Ingredients

• 1 cup Basic Honey Gallberry or Sweet Clover
• 2 tablespoons red chili flakes
• 1 whole dried chili, sliced (optional, for extra heat)

Recipe Notes

• While we think Basic Honey is the best, you could use your favorite honey for this recipe.

• Store your homemade hot honey in a cool, dark place. It does not require refrigeration and, when properly sealed, can last up to a year, retaining its flavor and potency.

Here's how to make it: 

1. Pour the honey into the saucepan. Add the red chili flakes and the optional sliced dried chili if you're a fan of extra heat.
2. Place the saucepan over low heat, stirring continuously to ensure the chili flakes are evenly distributed and the honey never has a chance to static at the bottom of your pot. Allow the mixture to simmer very gently for about 10 minutes. This process infuses the honey with a spicy essence without boiling it, which could alter its natural flavors.
3. Using the fine mesh strainer, filter out the chili flakes and any large chili pieces. This step ensures a smooth, clean texture for your hot honey.
4. Pour the strained honey into the sterilized glass jar. Ensure the jar is tightly sealed to preserve the freshness and flavor of your hot honey.
5. Remove the saucepan from the heat and let the honey mixture cool down for about 20 minutes. This resting period allows the flavors to meld beautifully.
