Cuisine: American
Prep Time: 10 minutes plus 2 to 4 hours to chill
Cook Time: 5 to 8 minutes
Total Time: 20 minutes plus time to chill
Servings: 8
Ingredients
- 1 1/2 cups granulated sugar
- 3 egg yolks, beaten
- 1/2 cup unsweetened cocoa powder
- 3 tablespoons cornstarch
- 1/2 teaspoon salt
- 3 cups milk
- 1 tablespoon butter
- 1 1/2 teaspoons vanilla extract
- 1 (9-inch) pie crust, baked (regular or gluten-free pie crust)
- 1 cup frozen whipped topping, thawed (optional)
- chocolate shavings, for serving (optional)
Here's how to make it:
- Add sugar and egg yolks to a large bowl and beat together with a hand mixer.
- Add the cocoa powder, cornstarch and salt. Mix again until blended.
- Blend in the milk gently with a fork or wire whisk.
- Place a large saucepan on the stovetop on medium heat and pour the batter into it. Cook for 5 to 8 minutes, stirring often, until the mixture thickens enough to stick on the back of a metal spoon.
- Remove the pot from the heat and add the butter and vanilla. Stir. Place to the side to cool a bit.
- Pour the chocolate pudding mixture into the pre-baked pie crust. Place into the refrigerator until set and cooled, about 2 to 4 hours. (You can make your own homemade pie crust or use a ready-made pie crust, regular or gluten-free.)
- When you're ready to serve, remove pie from the fridge and smooth on the whipped topping, if desired. Grate a small piece of chocolate over the whipped topping, if you like, and enjoy! Store leftover pie covered in the refrigerator.
