We loved dunking these delightful sheet pan kebabs in this creamy Mediterranean feta sauce with lemon and parsley (downright addictive). We served them alongside some rice and tomatoes with a fresh parsley garnish. They're also great as a sandwich on some toasty bread, or rolled into a wrap topped with your favorite dipping sauce. So simple, and great for meal-planning, too.
Cuisine: Mediterranean / American
Prep Time: 12 minutes
Cook Time: 13 to 18 minutes (ovens vary)
Total Time: 25 to 30 minutes
Servings: 8
Ingredients
- 2 pounds ground chicken (or turkey or beef)
- 1 cup red onion, diced
- 1 cup green bell pepper, diced (or your favorite bell pepper)
- 6 cloves garlic, minced
- 15 ounces (1 can) diced tomatoes, drained
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/4 teaspoon cinnamon
- 1 1/2 tablespoons extra virgin olive oil
- salt and black pepper, to taste (optional, but I used about 1 teaspoon of each)
- fresh parsley or other herb, for garnish (optional)
Here's how to make it:
- In a large mixing bowl, add the ground chicken, red onion, green pepper, garlic and drained tomatoes. Stir (or use your clean hands) to combine. (Instead of ground chicken, you could try ground turkey or beef.)
- Add the paprika, oregano, cinnamon and olive oil. Season with salt and pepper, to taste, if desired. Stir to combine.
- Spread the mixture onto a sheet pan that's been sprayed with cooking spray or lined with parchment paper, ensuring that it's evenly distributed. Once spread out, the mixture in the pan should end up being about 1/2-inch thick.
- Bake in an oven that's been preheated to 425 degrees F for 10 to 13 minutes, then broil until cooked through and golden brown, about 3 to 5 minutes. Chicken is done when it reaches 165 degrees F on a food thermometer.
- Allow to cool a bit before slicing and serving. (The number of kebabs depends on how big you slice them. I made about 16 kebabs.) Garnish with fresh parsley, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
