Ingredients
- 1 pound fresh salmon filet
- 1 medium lemon, in slices
- 1 medium lemon, for zesting and juicing (about 2 tablespoons lemon juice and 1 tablespoon lemon zest)
- 6 tablespoons unsalted butter
- 3 teaspoons minced garlic
- 4 tablespoons capers, drained and rinsed
Recipe Notes
- Because this recipe calls for lemon slices and zest, you'll need fresh lemons for this recipe (not bottled lemon juice).
- Rinsing the capers helps to remove some of the salt from the brine they're packed in.
- You can garnish with additional fresh lemon slices and/or fresh parsley, if you like.
- Store leftovers in an airtight container in the refrigerator. Reheat in the microwave.
Here's how to make it:
- Place the salmon filet skin side down in a casserole dish or baking pan that's been lined with aluminum foil and sprayed with cooking spray. Season the salmon with sea salt and black pepper, to taste, if desired.
- Cover the salmon with the lemon slices.
- Bake the salmon in a preheated 450-degree F oven for 10 minutes.
- Remove from oven and tent the salmon with aluminum foil. Allow to continue cooking in this way for 10 more minutes, or until desired doneness. Salmon is done when it reaches 145 degrees F on a food thermometer.
- While the salmon is cooking, prepare the sauce. In a saucepan over medium heat, add the butter and allow it to melt.
- Add the lemon zest and juice, capers and garlic. Stir to combine and cook until it becomes a sauce, about 2 minutes.
- Remove aluminum foil from the salmon and discard the lemon slices. Plate the salmon, then spoon the lemon caper butter sauce over it. Garnish with lemon slices and fresh parsley, if desired, and serve.
