This easy baked chicken recipe has nine simple gluten-free ingredients that come together to make a moist and delicious meal. Here's what you need to make this flavorful Mediterranean dinner tonight: chicken breast or thighs, plain Greek yogurt (check out the health benefits of Greek yogurt), roasted red peppers, kalamata olives, fresh spinach, fresh basil, feta cheese, shredded Parmesan cheese and minced garlic.
You mix together the topping ingredients, spread the tasty topping over the chicken in a baking dish then bake it for about 30 minutes. So easy! Serve this flavorful high-protein casserole with your favorite side dishes and preferred vegetables for a memorable meal. I served it with mashed potatoes and roasted vegetables for a delicious dinner we'll be making again soon!

Ingredients
- 2 pounds boneless, skinless chicken breasts or thighs (or a combination)
- 1 cup low-fat plain Greek yogurt
- 1/2 cup roasted red peppers, drained and chopped
- 1/2 cup kalamata olives, pitted and quartered
- 3 ounces fresh spinach, chopped
- 2 tablespoons fresh basil, chopped
- 1/2 cup feta cheese, crumbled
- 1 cup Parmesan cheese, shredded
- 2 teaspoons minced garlic
Here's how to make it:
- Put the chicken into a 13x9-inch baking pan or casserole dish that's been sprayed with cooking spray. Season the chicken with salt and black pepper, to taste, if desired.
- In a medium mixing bowl, add the Greek yogurt, red peppers, olives, spinach, basil, feta, Parmesan cheese and garlic. Season with salt and black pepper, if desired. Stir to combine.
- Spread the mixture evenly over the chicken.
- Bake uncovered at 375 degrees F until chicken is cooked through, about 30 minutes. Chicken is done when it measures 165 degrees F on a food thermometer.
- Garnish with fresh basil or parsley, if desired, and serve. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
