It is not too late to bring a dessert to your Thanksgiving gathering! These no-stress, two-ingredient pumpkin spiced cookies are so delicious and amazingly easy to make. The cookies are light and fluffy and bake up in just 12 minutes. The cookie recipe is so easy you could even get the kids involved in helping to make them. Grandma would be so proud!
To make these fall-inspired pumpkin cookies you will need a box of spice cake mix and a can of pumpkin puree (check out the health benefits of pumpkin). You can also add an optional frosting, which is simply a tub of cream cheese frosting.
Serve these soft pumpkin cookies for dessert with a cup of coffee, hot tea or cold milk. These easy cookies would also be a deliciously simple part of your Thanksgiving dessert table.

Ingredients
- 16 ounces (1 box) spice cake mix
- 15 ounces (1 can) pure pumpkin puree (not pumpkin pie filling)
- 14 ounces (1 tub) cream cheese frosting (optional)
Recipe Notes
- If you prefer a sugar glaze instead of frosting make it by mixing 1/3 cup of powdered sugar with 1 tablespoon of milk. Use a fork to mix and add a bit more milk if you want a thinner glaze. Drizzle over the tops of your cookies.
- You could also use another flavor of premade cake frosting instead of cream cheese. Chocolate or vanilla would be nice.
- Store the cookies in an airtight container to keep them fresh.
Here's how to make it:
- Place cake mix and pumpkin puree in a medium mixing bowl.
- Blend until smooth.
- Use a tablespoon or soup spoon to drop 12 small balls of dough onto a parchment paper-lined baking sheet.
- Bake in a preheated 350-degree F oven for 12 to 14 minutes, removing when the cookies are a bit cracked on top. (You don't want to overbake, which will make the cookies dry.) Repeat until all the batter is used.
- If desired, frost cookies with cream cheese frosting.
