- 3 eggs
- 1 cup mascarpone cheese, softened
- 1 cup chunky cinnamon applesauce
- 1 3/4 cups flour (all-purpose flour or gluten-free flour)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
Recipe Notes
- You can use all-purpose flour or gluten-free flour. I used GF 1:1 flour.
- You can use store-bought chunky applesauce or make your own homemade applesauce. If your chunky applesauce has liquid in it, drain it first.
- For some extra fall flavor, top with a sprinkle of cinnamon.
- Store the bread in an airtight container. This bread is extra delicious when toasted in a toaster oven or regular oven.
Here's how to make it:
- In a large mixing bowl, add the eggs and mascarpone cheese. Whisk to blend.
- Add the chunky applesauce and stir to blend.
- Add the flour, baking powder and salt. Mix well to combine. Fold in the walnuts, if using.
- Evenly spread the batter into an 8x4-inch loaf pan that's been lined with parchment paper.
- Bake at 350 degrees F for about 40 to 50 minutes, or until it passes the toothpick test. (If the loaf is getting too brown on top, cover it with aluminum foil.)
