I needed a quick and tasty main dish last week, and this easy miso chicken was just perfect – with no marinating needed. All you need to do is mix up the savory sauce and pop it into your oven or air fryer. The simple six-ingredient sauce is salty and sweet, and complements the moist chicken thighs perfectly. The miso chicken turns out so tender and juicy!
I baked my chicken in the oven, but you can also easily bake these in an air fryer. I’ve included the directions in Recipe Notes. Ingredients
- 8 - 10 boneless/skinless chicken thighs
- 2 tablespoons white miso paste
- 2 tablespoons rice vinegar
- 2 tablespoons mirin
- 1 tablespoon honey
- 1 tablespoon soy sauce or tamari
- 1 tablespoon minced garlic
- 4 green onions, sliced, for serving (optional)
Recipe Notes
- If you don’t have mirin, you can use additional rice vinegar instead.
- If you’d like to use an air fryer, line it with aluminum foil and cook for 20 minutes at 320 degrees F, turning halfway through. Chicken should have an internal temperature of 165 degrees F.
- For a gluten-free dinner, use tamari instead of soy sauce. Most miso is gluten-free, but be sure to check the label.
- You can baste the chicken with leftover sauce when you turn halfway through cooking.
- For browner chicken, broil for one to two minutes at the end of cooking.
Here's how to make it:
- Combine the white miso paste, rice vinegar, mirin, honey soy sauce and garlic in a bowl.
- Put the chicken into a baking dish. Add the sauce and turn to coat the chicken.
- Bake in a preheated 375-degree F oven for about 30 minutes, flipping the chicken halfway through, or until chicken is cooked through. If desired, brown the top under a broiler for 1 to 2 minutes.
- Serve over rice or noodles, if desired. Garnish with fresh parsley or diced green onions, if you like.
