Those of you who follow me on 30Seconds know I'm trying to take in more healthy sources of protein and that I try to include fresh, nutritious ingredients in my recipes. I combined both of those things in this rich and creamy high-protein berry breakfast casserole recipe.
This creamy delicious breakfast recipe tastes a bit like cheesecake (yep, "cheesecake" for breakfast!), and it contains my favorite secret ingredients for added protein: Greek yogurt and cottage cheese. Check out the health benefits of Greek yogurt and the health benefits of cottage cheese. Plus, it includes fresh berries and oat flour for added nutrition.
To make this yummy gluten-free berry breakfast bake recipe, here are the eight wholesome ingredients you need to gather: plain Greek yogurt, cottage cheese, eggs, pure maple syrup, oat flour, vanilla extract, fresh strawberries and fresh blueberries (check out the health benefits of fresh berries). The chopped walnuts are optional. You combine the ingredients then bake until cooked through and golden.
Serve this scrumptious berry bake for breakfast or as an elegant brunch alongside some fresh fruit, if you like. It also can provide a boost of protein when you need a nutritious snack any time of day.

Ingredients
- 1 3/4 cups low-fat plain Greek yogurt
- 1/3 cup low-fat cottage cheese
- 4 large eggs
- 1/3 cup pure maple syrup
- 1 1/2 teaspoons vanilla extract
- 3/4 cup oat flour
- 3/4 cup fresh strawberries, chopped
- 3/4 cup fresh blueberries
- 1/2 cup chopped walnuts (optional)
Recipe Notes
- I used my medium-sized Le Creuset casserole dish, which measures 10x8 inches.
- If you don't want to use the cottage cheese, simply replace it with additional Greek yogurt. You also can whip the cottage cheese in a blender before using to make it creamy.
- Oats are naturally gluten-free, but to be sure, use gluten-free oat flour.
- You can buy oat flour or make your own oat flour by putting rolled oats into a blender for about 30 seconds.
- I added chopped walnuts because I like the crunch, but they're optional.
- Serve with a drizzle of maple syrup and a sprinkle of chopped nuts, if desired.
- Store leftovers in an airtight container in the refrigerator.
Here's how to make it:
- In a large mixing bowl, add the Greek yogurt, cottage cheese, eggs, maple syrup and vanilla. Whisk to combine until smooth.
- Add the oat flour and stir to combine.
- Fold in the strawberries and blueberries. Fold in the walnuts, if using.
- Pour the mixture into a baking pan or casserole dish (see Recipe Notes) that's been sprayed with cooking spray.
- Bake in a preheated 350-degree F oven for 30 to 40 minutes, or until cooked through and golden. Allow to cool before slicing and serving.
