Ingredients

• 3/4 cup cilantro, packed
• 1 large jalapeno, seeds and stem removed (see Recipe Notes)
• 13.5 ounces (1 can) unsweetened coconut milk (full fat)
• juice from 1 large lemon (about 3 tablespoons)
• 1 teaspoon ground cumin
• 1 teaspoon kosher salt

Recipe Notes

• If you would like more heat, add some or all of the the jalapeno seeds.

• Store the salad dressing in an airtight container, mason jar or salad dressing cruet.

Here's how to make it: 

1. Place all the ingredients in a blender.
2. Blend on high until smooth. Add salt and black pepper, to taste.
