No long shopping lists are involved in making this simple chicken dinner. Here is what you need to grab from your fridge: chicken breasts and spinach artichoke dip. That's it. The thin chicken breasts, or chicken cutlets, are seasoned with salt and black pepper, then a layer of dip is smeared on the top. Bake for about 20 minutes and get ready to dig in.
These chicken breasts make a quick and easy family dinner during the week, but could be served to dinner guests. Serve the chicken with your favorite side dishes. I served mine with buttered carrots and roasted potatoes.

- 2 chicken breasts (thin-cut or cutlets)
- 4 tablespoons spinach artichoke dip

- For easier cleanup, you can cover the bottom of the baking dish with parchment paper or aluminum foil. I oiled the pan with olive oil.
- If you're cooking more than two chicken breasts, use a 13x9-inch baking pan.
- I used a spinach artichoke dip from Costco, but use your favorite brand.
- If you can't find thin-cut chicken breasts or chicken cutlets, simply slice regular chicken breasts in half lengthwise.
- You can add other seasonings to the chicken breasts like garlic powder, onion powder, parsley flakes or whatever seasoning you like.

Here's how to make it:
- Put the chicken breasts into an oiled baking dish. Season with salt and black pepper.
- Spread 2 tablespoons of spinach artichoke dip on each chicken breast, spreading to cover the entire top.
- Bake in a preheated 400-degree F oven for about 20 minutes, or until chicken is cooked through (165 degrees F internal temperature) and dip is lightly browned.
