To make this Greek-inspired flavorful lemon chicken recipe you will need bone-in chicken thighs, extra-virgin olive oil or avocado oil, lemons for juicing and zesting, fresh garlic, dried oregano, Dijon mustard, sea salt, black pepper and optional fresh herbs. Ingredients
- 8 bone-in chicken thighs, patted dry with a paper towel
- 2 tablespoons extra virgin olive oil or avocado oil
- juice and zest of 1 lemon
- 5 cloves garlic, pressed or minced
- 2 tablespoons dried oregano
- 2 tablespoons Dijon mustard
- sea salt and black pepper, to taste
- fresh lemon slices and chopped fresh parsley or dill, for garnish (optional)
Here's how to make it:
- In a small bowl, stir together the oil, lemon juice, zest, garlic, oregano, mustard, sea salt and black pepper. (Adjust the amounts of each ingredient to suit your tastes.)
- Put the chicken into a baking dish in a single layer. Drizzle with the marinade and rub to coat all sides. Let the chicken marinated in the fridge for at least 30 minutes. (For easier cleanup, cover the baking pan with parchment paper or aluminum foil.)
- When ready to bake, tuck a few fresh lemon slices around the chicken and sprinkle with fresh herbs, if desired. Bake in a preheated 350-degree F oven for about 45 minutes, or until the chicken reaches an internal temperature of 165 degrees F on a meat thermometer. Store any leftover chicken in an airtight container in the fridge. Reheat in the microwave.

I opted for chicken breast instead of thighs and when I ran out of oregano I used Italian seasoning which was an excellent alternative.
