Muffins
- 1/2 cup butter (1 stick), softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup unsweetened applesauce
- 1 3/4 cups flour
- 2 teaspoons baking powder
- 1/2 tablespoon ground cinnamon
- large pinch of salt
Cinnamon Topping
- 1/4 cup butter, melted
- 1/3 cup granulated sugar
- 1/4 - 1/2 teaspoon ground cinnamon

Here's how to make it:
- With an electric mixer, cream the butter and sugar together. Add the eggs and beat until fluffy. Stir in the applesauce and vanilla.
- In another bowl, whisk together the flour, baking powder, ground cinnamon and salt.
- Add the dry ingredients to the wet ingredients.
- Spoon the batter into 12 greased or lined muffin cups. Bake in a preheated 350-degree F oven for about 12 to 15 minutes.
- Stir together the 1/3 cup sugar and 1/4 teaspoon cinnamon in a small bowl.
- When the muffins are done baking, dip the tops into the melted butter and then into the cinnamon-sugar mixture.
