Ingredients

Muffins

• 1/2 cup butter (1 stick), softened
• 1/2 cup granulated sugar
• 2 eggs
• 1 teaspoon vanilla
• 1 cup unsweetened applesauce
• 1 3/4 cups flour
• 2 teaspoons baking powder
• 1/2 tablespoon ground cinnamon
• large pinch of salt

Cinnamon Topping

• 1/4 cup butter, melted
• 1/3 cup granulated sugar
• 1/4 - 1/2 teaspoon ground cinnamon

Recipe Notes

Here's how to make it: 

1. With an electric mixer, cream the butter and sugar together. Add the eggs and beat until fluffy. Stir in the applesauce and vanilla.
2. In another bowl, whisk together the flour, baking powder, ground cinnamon and salt. 
3. Add the dry ingredients to the wet ingredients. 
4. Spoon the batter into 12 greased or lined muffin cups. Bake in a preheated 350-degree F oven for about 12 to 15 minutes. 
5. Stir together the 1/3 cup sugar and 1/4 teaspoon cinnamon in a small bowl. 
6. When the muffins are done baking, dip the tops into the melted butter and then into the cinnamon-sugar mixture.
