Crispy chicken recipes are always fan favorites at 30Seconds. After making my cafeteria-style eggplant casserole recipe, I had some leftover herb-seasoned stuffing breadcrumbs in the pantry. Who knew these seasoned crumbs would turn chicken breasts into the crispiest chicken for dinner!
After crushing up the stuffing mix, I created a dredging station by putting them into a bowl and pouring milk into another bowl. The chicken breasts are seasoned with salt and black pepper, dipped into the milk and then dredged in the stuffing mix until they're completely covered. The chicken is pan-fried in olive oil until golden, juicy and crispy. So quick and easy!
The stuffing mix gets incredibly crispy on the outside of the chicken, and also adds flavor because it is already seasoned. These juicy boneless chicken breasts are a fast, high-protein dinner served with your favorite side dishes. I served mine with carrots and a fresh Mediterranean lentil salad.

Ingredients
- 2 chicken breasts, pounded to even thickness
- 1/3 - 1/2 cup crushed herb stuffing mix
- 1/4 cup milk
- 2 tablespoons olive oil, for frying (or as needed)
Recipe Notes
- I used evaporated milk, but you can use whole milk, low-fat milk or skim milk.
- This recipe can easily be doubled to serve four.
- For the crispiest chicken, do not crowd the pan when frying.
- You could use boneless chicken thighs instead of breasts.
Here's how to make it:
- Crush the stuffing mix to create fine crumbs. Put the crumbs into one shallow bowl and the milk into another shallow bowl. Season the chicken breasts with salt and black pepper.
- Heat the olive oil in a skillet. Dip the chicken into the milk and then into the crumbs, coating it completely. Place the chicken in the hot oil and cook over medium heat until golden on one side.
- Flip the chicken over and continue to cook until the chicken is golden on both sides and cooked through, about 8 to 10 minutes total, depending on size and thickness of chicken. (Chicken is done at 165 degrees F.)
- Serve with your favorite side dishes.
