Yes, this really is the best burger patties I've ever cooked. One bite of this moist and juicy burger made my eyes widen and my face light up. This burger hack that I heard about from a pitmaster from Swine Life BBQ combined with grilling tips from Geoffrey Zakarian when he was on Live With Kelly & Mark, will be the only way I grill burgers going forward. There, I said it.
"Mayonnaise can fix the world’s problems! Just saying!" says the pitmaster from Swine Life BBQ. Agreed. Mayonnaise is one of my favorite secrets and recipe ingredients, so I knew this cooking hack had merit and would probably work. Not only did I put mayonnaise into my ground beef, but used some of Chef Zakarian's grilling tips, too. Here are the tips the Food Network chef shared with Mark and Kelly:
- Loosely pack the meat into patties. No compacting!
- Just season the meat with salt, no black pepper. Black pepper will burn as the patties cook, and can get bitter. Put the pepper on when you're assembling your burger. (Check out the health benefits of black pepper.)
- Butter and season your buns with salt, then toast on the grill.
- No smashing the burger while it cooks, unless you're making a smashburger, which is a different burger recipe.
- Make sure the cheese is completely melted if making cheeseburgers.

Ingredients
- 1 pound ground beef
- 1 tablespoon mayonnaise, heaping (I use Hellman's Real Mayonnaise)
- sea salt, to taste
Here's how to make it:
- Put the ground beef and mayonnaise into a mixing bowl.
- Gently mix until just combined. (Do not overmix.)
- Shape the meat into desired number of patties. (You can get two (extra thick) to six (thin) patties, realistically, from 1 pound of meat. I chose to do three thicker patties.)
- Sprinkle the formed patties with sea salt, to taste. (No black pepper yet!)
- Put the patties onto a hot grill. (You could also cook them in a grill pan, nonstick skillet or cast iron skillet.)
- Cook until the patties reach your desired doneness. (If adding cheese, place it on top and make sure it completely melts.)
- Make your burger how you like it! Store any leftover patties in an airtight container in the fridge. Reheat as desired.
