Total Time: 18 minutes
Servings: 6
Ingredients
- 1 pound ground chicken
- 1 egg
- 4 green onions, chopped
- 1/4 cup chopped flat-leaf parsley
- 3 tablespoons mayonnaise
- 3 tablespoons breadcrumbs (regular or gluten-free breadcrumbs)
- salt and black pepper, to taste
- 1 1/2 teaspoons garlic powder (divided)
- 1/3 cup flour (regular or gluten-free flour)
- 2 tablespoons olive oil, for frying
Recipe Notes
- Do not crowd the patties when cooking. You may have to cook in two batches.
- The chicken is done at 165 degrees F internal temperature. Use a food thermometer if you're unsure.
- Use gluten-free flour and gluten-free breadcrumbs for a gluten-free dinner.
- Instead of making six patties, you could make four larger patties for sandwiches.
- You could use 1/2 teaspoon garlic powder and 1/2 teaspoon onion powder in the patties.
- You can add fresh herbs to the mix like dill, basil, thyme, oregano or rosemary.
Here's how to make it:
- Put the ground chicken, egg, green onions, parsley, mayonnaise, breadcrumbs, 1 teaspoon of garlic powder, salt, to taste, and black pepper, to taste, into a mixing bowl. Mix together.
- Put the flour and remaining 1/2 teaspoon of garlic powder into a shallow bowl. Season with salt and black pepper.
- Heat the olive oil in a skillet. Shape the chicken mixture into six patties. Dust the patties with the flour and then place in the hot oil.
- Cook the chicken patties about 3 to 4 minutes on the first side or until golden brown. Flip the patties over and continue to cook until golden and cooked through, about 3 to 4 minutes more.
