I don't enjoy cooking or the process of preparing food in general, so I'm quick to just grab packaged foods or snacks when I'm hungry. More often than not, those are not super nutritious foods. Either that or I will literally sit there and starve myself out of pure laziness. My relationship with food has never been that great.
As I am working on my health, I have been trying to bring in more nutritious meals that are very quick and easy to prepare. This super simple creamy high-fiber and high-protein guacamole recipe is one of them. (Check out the health benefits of protein and the health benefits of fiber.)
It's not a true guacamole, so please don't fight me, Mexican friends and foodies. I am aware it is not authentic – but it can be made in five minutes or less, which is the whole point. No chopping. No real measuring. Not too many dishes or a lot to cleanup. Very hard to mess up, so doesn't require much thought. Very quick, very filling and very tasty. Plus you get the health benefits of Greek yogurt and the health benefits of avocado.
To make this gluten-free, protein-rich, fiber-rich and low-sodium guacamole recipe you will need plain Greek yogurt, ripe avocados, lemon juice, salsa and optional fresh cilantro. Serve this healthy guac as a snack, appetizer or side dish with dinner.

Ingredients
- 2 - 3 tablespoons plain Greek yogurt
- 2 avocados (ripe)
- squirt of lemon juice (to taste)
- 1 spoonful salsa (to taste)
- chopped fresh cilantro (optional)
Here's how to make it:
- In a bowl, combine the Greek yogurt, avocados, lemon juice and salt and black pepper, to taste. (Fresh is best when it comes to lemon juice, so squeeze your own if you can. Bottled lemon juice will work in a pinch.)
- Add the salsa and cilantro, if using. (Use your favorite salsa for this easy guacamole recipe.)
- Mash everything together with a fork until well incorporated.
- Serve with tortilla chips, on toast or enjoy as is! Guacamole is best eaten right away. If you must, store the guacamole in an airtight container in the fridge.
