Ms. Parks wrote that they were "featherlite," and that is exactly what you will find. The peanut butter makes an interesting addition that is a very fun change for breakfast or brunch. I made them for my friend's daughter and we both agreed that they were one of our new favorite pancake recipes.
To make Rosa Parks' peanut butter pancakes you will need the following ingredients: all-purpose flour or gluten-free flour, baking powder, granulated sugar, salt, creamy peanut butter, an egg, vegetable oil or shortening and whole milk. I used natural peanut butter for this recipe, and feel free to add chocolate chips if you'd like. Peanut butter and chocolate is never a miss! If you're gluten-free, use gluten-free flour. (Check out the health benefits of protein.)
Serve these light and fluffy from-scratch, low-sodium pancakes for breakfast or brunch. You could even serve them for dessert with a dollop of whipped cream.
