To make these fluffy pancakes for breakfast or brunch you will need just a few basic ingredients. Here is your shopping list: all-purpose flour, baking powder, salt, granulated sugar, milk, an egg, butter, vanilla extract and chocolate chips. The batter is mixed up and allowed to rest for about five minutes before cooking. Letting the pancakes rest results in the most fluffy pancakes.
Don't skip the five minutes of rest time. This lets the gluten relax, resulting in the fluffiest pancakes. Serve these low-sodium chocolate chip pancakes for breakfast or brunch with maple syrup and butter. You could also serve them for dessert with whipped cream and fresh fruit. Delicious!

Ingredients
- 1 1/2 cups flour (you can use gluten-free flour)
- 4 teaspoons baking powder
- large pinch of salt
- 2 tablespoons granulated sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
- 1 teaspoon vanilla
- 1 cup chocolate chips, plus more for topping and serving
Here's how to make it:
- Put the flour, baking powder, salt and sugar into a mixing bowl. Whisk to combine. (For gluten-free pancakes, use gluten-free flour.)
- In another mixing bowl, stir together the milk, egg, melted butter and vanilla.
- Add the dry ingredients to the wet ingredients until just combined.
- Fold in the chocolate chips. Let the batter rest for 5 minutes. (Use whatever kind of chocolate chips you like for this recipe. Milk chocolate, dark chocolate, bittersweet chocolate or semisweet chocolate chips would all be delicious.)
- Heat a nonstick skillet over medium-high heat. Add a little butter or spray with nonstick cooking spray.
- Pour about 1/4 cup of the batter into the pan for each pancake. Top with additional chocolate chips, if desired.
- Cook for about 3 minutes or until you see bubbles form. Flip the pancakes over and cook until cooked through. Serve hot with desired toppings. (You can make extra and freeze them for later.)
