Why does fall make me want sweet potatoes? Sweet potatoes are one of my favorite root vegetables year-round because they are loaded with beta-carotene, a flavonoid compound with powerful antioxidant properties, not to mention the other health benefits of sweet potatoes. I like to give my kids a boost of beta-carotene by making these easy sweet potato fries spiked with cinnamon. This baked sweet potato recipe always gets my kids' seal of approval!

To make these baked sweet potato wedges you will need just three simple ingredients: sweet potatoes, olive oil (check out the health benefits of olive oil) and ground cinnamon (yes, cinnamon has health benefits, too). The sweet potatoes are drizzled with the olive oil, sprinkled with the cinnamon, tossed and then baked until tender and golden brown.

Serve these sweet potato wedges as a side dish with dinner. They go well with pretty much any protein, from chicken to lamb to beef to seafood to pork.

• sweet potatoes, peeled and cut into wedges
• olive oil
• cinnamon

Recipe Notes

• Nutritional value is based on one medium-size sweet potato.

• You can add other warm spices to the potatoes like cloves, allspice, nutmeg and cardamom.

• Store the potatoes in an airtight container in the fridge. Reheat in the microwave or in a warm oven.

Here's how to make it: 

1. Put the sweet potato wedges on a baking sheet.  Drizzle with olive oil. Sprinkle with cinnamon. Season with sea salt, if desired.
2. Bake in a preheated 400-degree F oven for 15 to 20 minutes or until golden brown. Turn potatoes over and bake another 15 to 20 minutes.
