An authentic Swiss cheese fondue is a perfect way to share a special evening with family and friends – and even more ideal when planning a romantic evening for two. My wife, Elisa Schmitz, and I were engaged on New Year's Eve in the Alps, where we had a traditional fondue dinner. Since then, we often celebrate our "engage-versary" with fondue on New Year's Eve.
I have tested a few fondue recipes and, while all were good, this is the recipe I find the most authentic (and delicious). Plus, this creamy Swiss cheese fondue recipe is easier to make than you may think. Here's what you need to make an authentic Swiss cheese fondue: Swiss gruyère cheese, Swiss Emmentaler cheese, dry white wine, cherry liqueur, lemon juice, nutmeg and cornstarch. You add the ingredients into a fondue pot and simmer until it's all melted and delicious. I shredded my own cheese, but you can use pre-shredded cheese in a pinch.
For dipping into the cheese fondue, bread and apple cubes are tasty. I suggest serving five to seven chunks of bread and apple, respectively, per person. The rest of the dry white wine is a wonderful pairing to celebrate the gathering.

Ingredients
- 8 ounces Swiss gruyere cheese, shredded
- 8 ounces Swiss Emmentaler cheese, shredded
- 3/4 cup dry white wine (I used German Riesling Trocken, which adds a special flair)
- 2 tablespoons Kirsch (cherry liqueur)
- 2 tablespoons lemon juice (fresh is best)
- 1/4 teaspoon ground nutmeg
- 1 tablespoon plus 1 teaspoon cornstarch
For Dipping
- apple slices
- bread cubes
Here’s how to make it:
- To a fondue pot over medium heat on the stove, add the wine, cherry liqueur, lemon juice, nutmeg and cornstarch. Stir to combine. If you don't have cherry liqueur, you can use brandy or sherry. Using fresh lemon juice makes it especially delicious, but you can use bottled if you prefer.
- Add the cheeses. Stir to combine. Continue stirring until the cheese melts and do not allow the mixture to boil to avoid burning the fondue.
- Serve directly from the fondue pot using fondue forks. Use a fondue burner underneath to keep the fondue warm and melted. Store any leftovers in an airtight container in the refrigerator. Reheat in the fondue pot (or microwave).
