Light & Fluffy Homemade Pancakes Recipe (You Don't Need Pancake Mix) Breakfast Brunch Budget-friendly
My sweet god-daughter stayed with me this weekend and she loves to cook! We made all sorts of things including these fluffy and light pancakes that were so simple, fun and delicious. This pancake recipe is easy to make with kids (if you want) and can be topped with any of your favorite fruits. In our case, whipped cream and maple syrup!
You don't need a box of pancake mix to make hot pancakes for breakfast or brunch. Go into your pantry and grab flour, granulated sugar, baking powder, baking soda, salt and vanilla extract. Next, head to your refrigerator and grab milk, butter and an egg.

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 3/4 cups milk
- 1/4 cup butter, melted
- 2 teaspoons vanilla extract
- 1 large egg

- You can add chocolate chips, fruit or any other toppings you like to the batter or on top.
Here's how to make it:
- Combine together the flour, sugar, baking powder, baking soda and salt in a medium mixing bowl. Make a pocket in the center and add the milk, melted butter, vanilla and egg. Use a fork or whisk to combine the ingredients together (there will be lumps, you don't want it to be smooth). If the batter is too thick you can add 1 tablespoon more milk, if needed.
- Heat a frying pan on medium heat. When the pan is warm melt a bit of butter and spoon in your batter. Let the pancake cook on the first side until multiple bubbles appear on top. Flip once and cook for another minute or so.
- Remove from heat and serve warm with any of your favorite toppings.
