My husband and I went out to dinner the other day and had this wonderful arugula and melon salad before our main dish. The restaurant didn't want to share their salad recipe so I decided to make my own version at home, and I was really happy with the results.

Grab those end-of-summer sweet melons and tomatoes and get ready for a fresh salad for lunch or dinner tonight! Here is your shopping list for this refreshing arugula salad: arugula, cantaloupe, cucumber, red onion, tomato, lemons for juicing, garlic, Dijon mustard, honey, olive oil and optional thyme.

Salad 

  • 2 cups arugula
  • 2 cups fresh cantaloupe, cubed
  • 1/3 - 1/2 cucumber, washed and sliced
  • 1/4 cup red onion, thinly sliced
  • 1 tomato, cut into wedges

  • You can use maple syrup instead of honey.
  • Try this recipe with fresh watermelon instead of cantaloupe.
  • Squeeze your own lemon juice. Fresh is always best.

Here's how to make it: 

  1. Combine dressing ingredients in a jar or container with a lid. Season with salt and pepper, to taste. Shake to combine.
  2. Place arugula, onions and cucumbers in a medium salad bowl and toss with some of the vinaigrette. 
  3. Place greens on salad plate and add tomato and melon. Drizzle a bit more dressing on top and add fresh ground pepper, if desired, and enjoy!
