Fall is here, and so is my quest for new wonderful soups to make. This white bean, kale and turkey soup recipe comes together so easily and hits just the right spot for our cooler fall nights. This budget-friendly ground turkey soup recipe doesn't take long to whip up, and I think it might just become one of your new favorites!

All you need to make this hearty, healthy, gluten-free soup recipe is olive oil, onion, carrots, hearty greens, tomato paste, cumin, salt, pepper, ground turkey, crushed red pepper flakes, fresh garlic and ginger, chicken broth, white beans, fresh herbs and fresh lemon juice (fresh is best!).

Ingredients

• 3 tablespoons olive oil
• 1 large onion, diced
• 2 large carrots, diced
• 1 - 2 bunches sturdy greens, such as kale, broccoli rabe, mustard greens or collard greens
• 1 tablespoon tomato paste
• 1 teaspoon ground cumin, plus more to taste
• 1/2 teaspoon crushed red pepper flakes, plus more to taste
• 1/2 pound ground turkey
• 3 garlic cloves, minced
• 1 tablespoon finely grated or chopped fresh ginger
• 1 teaspoon kosher salt, plus more to taste
• 1 quart (4 cups) chicken broth
• 2 cans (15 ounces each) white beans, drained and rinsed
• 1 cup chopped fresh herbs, such as parsley, mint, dill, basil, tarragon, chives or a combination
• fresh lemon juice, to taste

Recipe Notes

• If you don't have herbs in your garden, feel free to use less expensive herbs like parsley and cilantro including some of the stems.

• If you want a thicker soup, you can press the beans a bit with the mixing spoon to release the starch.

• Tomato paste can freeze. Just pre-measure 1 tablespoon portions and wrap in plastic and place in the freezer so you don't waste the can.

• After step 5, if you decide to add water, you can also add a chicken bouillon cube if the broth seems too watery.

Here's how to make it: 

1. Heat a large soup pot on medium heat. Add oil, garlic, carrots, onion and sauté for about 8 to 10 minutes, or until soft and slightly brown on the edges.
2. While the vegetables cook, wash greens and remove stems and cut or tear into small pieces. When the onion is soft, add the tomato paste, cumin and a pinch of crushed red pepper flakes. Cook for another minute or so. Add turkey, ginger, garlic, and salt and cook for about 5 to 6 minutes until turkey is mostly brown.
3. Add beans and broth and bring it to a simmer. Continue to simmer until the soup gets a bit thicker, about 20 minutes. Taste the broth and add more salt, pepper and red pepper flakes, if needed.
4. Add the greens and simmer until they are soft. If your greens are on the tougher side, they will take a bit longer to soften. If the broth reduces too much, just add a bit of water.
5. Add your herbs and fresh lemon juice, to taste.
6. Serve warm with a drizzle of olive oil and more red pepper flakes and your favorite biscuits, corn chips or warm bread!
