- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 fennel bulb, chopped
- 1 can (28 ounces) crushed tomatoes or 3 large fresh tomatoes, diced small
- 4 cups vegetable broth
- 1 can (16 ounces) artichoke hearts, chopped
- 2 heaping tablespoons fresh herbs
- 1 teaspoon sea salt, or more to taste
- 1/4 teaspoon ground black pepper, or more to taste
- 2 tablespoons balsamic vinegar
- 2 tablespoons pure maple syrup (optional)

Here's how to make it:
- Place a large soup pot on the stove on medium heat. Sauté the onion and fennel for about 8 minutes. Add the garlic and cook for an additional 2 minutes.
- Add the tomatoes, broth, artichokes, fresh herbs, salt, pepper and balsamic. Cook for about 15 minutes or until heated through. Taste and adjust salt, pepper and add maple syrup, if needed or desired. Top with homemade croutons, if desired.
