We were at a dear friend's home the other night and they were serving this simple and delicious appetizer that we made in about five minutes! This stuffed peppers recipe has just two (two!) simple ingredients and tastes amazing.

I had never heard of these delicious peppadew peppers from Africa. The peppers were actually discovered by a gentleman in South Africa in 1993 in the backyard of his vacation home. These sweet peppers are only slightly spicy, but provide a great balance when you place a small bite of creamy feta inside.

All you need to make this appetizer for your friends and family is pappadew peppers and feta cheese. The cheese is cut into cubes and stuffed inside the peppers. There's not many recipes that are more simple! Serve these stuffed peppers as a cold appetizer before dinner or at your next get-together beside the spinach dip.
