Occasionally we have breakfast for dinner. This easy SPAM® and hash brown egg bake recipe has survived the rotation through the years. For a nontraditional egg breakfast casserole recipe, this is my family's favorite. Yes, I know it's SPAM. Just try it – you may like it!
Here is your shopping list for this easy high-protein breakfast casserole: a can of SPAM, frozen hash brown patties, cheddar cheese (slices and shredded), eggs, milk and black pepper. The hearty ingredients are layered in a casserole dish and then baked until the eggs are set. So easy!
Serve this SPAM, potato and eggs dish for breakfast, brunch or breakfast for dinner. Add a side of fresh fruit and a glass or orange juice for a tasty meal the entire family will enjoy.

Ingredients
- 12 ounces (1 can) SPAM
- 32 ounces (1 bag) frozen hash brown patties
- 6 slices cheddar cheese
- 1 cup shredded cheddar cheese
- 12 eggs
- 1/2 cup milk
Here's how to make it:
- Arrange a layer of hash brown patties on the bottom of a 13x9-inch baking pan that's been sprayed with nonstick cooking spray.
- Arrange 6 slices of cheese over that layer.
- Cut the SPAM into 12 slices and arrange over the cheese. (This breakfast casserole could be made with sliced deli ham instead of SPAM.)
- Combine the milk and eggs and whisk until lightly beaten. Season with black pepper, if desired. Optional: Add some chopped green onions or fresh chives to the eggs for a little freshness.
- Pour egg mixture over SPAM layer.
- Top with shredded cheese and more black pepper, to taste.
- Cover with aluminum foil and bake in a preheated 350-degree F oven for about 1 hour. Check to be sure middle is firm. If not, cook in 10 minute increments, until center is firm. Remove foil and brown cheese 5 minutes.
- Slice and serve. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
