Sometimes, you just need a satisfying comfort food meal, and you need it fast. Here's a quick and delicious, belly-filling comfort food casserole made with potatoes, cheese and bacon (need we say more?) to dish up and serve for dinner.
This is an Amish recipe, so you know it's got that old-fashioned comfort food feel that most everyone loves. Plus, with just six ingredients, it's simple to make and is ready in about half an hour. Seriously!
To make this super tasty, gluten-free potato and bacon casserole, you will need just six ingredients. Here's your simple shopping list: potatoes, bacon, sour cream, mozzarella cheese, cheddar cheese and green onions (check out the health benefits of green onions, also known as scallions) or chives (check out the health benefits of chives).
For an even heartier meal, add diced leftover cooked chicken. We're pretty sure you'll get requests for this decadent recipe because it's so easy and delicious. Pure comfort food in no time! Although this cheesy casserole could be a complete meal, it also makes a perfect side dish for any protein.

Ingredients
- 13 medium russet potatoes, baked until about 2/3 done (still firm to cut)
- 1 pound bacon, cooked and crumbled
- 3 cups sour cream
- 2 cups mozzarella cheese, shredded
- 2 cups cheddar cheese, shredded
- 3 green onions or chives, chopped
- fresh parsley for garnish (optional)
Here’s how to make it:
- Prepare a 13x9-inch glass baking dish with cooking spray. Set aside.
- Quarter the cooked potatoes and place half in the prepared casserole dish in a single layer. Sprinkle with bacon and cheese. Season with salt and pepper, if desired. (Instead of baking the potatoes, you can microwave them until they're 2/3 done (still firm to cut). Instead of cheddar cheese, you can try this recipe with Parmesan or another favorite cheese.)
- Top with half of the sour cream, sliced green onions or chives, and then the cheeses. Repeat layers. Top with more cheese.
- Bake uncovered at 350 degrees F for 20 to 25 minutes or until cheeses are melted and golden. Sprinkle with additional sliced scallions or chives, and/or fresh parsley, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave or oven.
