We love summer fruits and finding new ways to use them in recipes. Fresh strawberries and juicy peaches are two of the stars of summer, and this easy galette recipe gives both fruits centerstage.

A galette is a French dessert that's a freeform dough topped with a sweet (sometimes savory) filling that's baked to golden perfection. This peach and strawberry galette has a sweet fruit topping and is super simple to make. This galette is the perfect way to end a summer dinner.  

All you need to make this easy fruit galette is flour, sugar, salt, butter, water, fresh strawberries and peaches, cornstarch and vanilla. You'll also need to grab an egg and a little milk for an egg wash. The dough is rolled into a circle, topped with the fruit filling and baked until golden. If your dough circle isn't perfect, who cares!? We call that rustic and it'll be just as beautiful. Serve this fruit galette for dessert with a big scoop of vanilla ice cream on top. Delicious!

Ingredients

Crust

  • 1 1/2 cups all-purpose flour 
  • 2 tablespoons granulated sugar, plus more for sprinkling
  • large pinch of salt
  • 1/2 cup (8 tablespoons) butter, cold and cubed
  • 1/4 cup cold water
  • egg wash (1 egg beaten with 1 tablespoon milk)

Filling

  • 1 1/2 cups sliced fresh peaches (about 2 medium peaches)
  • 1 1/2 cups sliced fresh strawberries
  • 3 tablespoons granulated sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla

  • The dough can be made up to three days ahead of time, or frozen for up to three months.
  • When putting the filling on the dough, make sure you don't get too much juice or it will be soggy. 

Here's how to make it: 

  1. To make the crust, whisk together the flour, sugar and salt in a mixing bowl. Use a pastry cutter or two forks to cut in the butter until it looks like coarse crumbs. Add the water and stir until moistened and it's a workable dough. (Add a little more water, if needed.) Put the dough onto a floured surface and work into a ball, then flatten it into a disc. Wrap the dough in plastic wrap and refrigerate at least 1 hour. 
  2. To make the filling, put all the ingredients into a mixing bowl. Gently stir until combined. 
  3. Roll the dough out to a 12-inch circle. Put the dough onto a parchment paper-lined baking sheet. Spoon the filling (without juices) onto the center of the dough, leaving about a 2-inch border. Fold the edges up to form the galette. Brush the edges with the egg wash and sprinkle with granulated sugar. 
  4. Bake in a preheated 425-degree F oven for about 30 minutes or until golden. Let the galette rest for about 10 minutes before cutting.
