A recipe that cooks in less than 10 minutes? Count me in. And one that has pasta, lemon and shrimp? Well, I'm in culinary heaven right now. This angel hair lemon pasta recipe with shrimp is a fantastic seafood dinner that hits on all notes: quick, easy, delicious.

The shopping list is short and sweet: angel hair pasta, butter, olive oil, garlic, shrimp, lemons and fresh parsley. While the pasta boils, cook the garlic until fragrant, then toss in the shrimp. Once they turn pink, which happens fast, add the lemon zest and juice. Last, but definitely not least, is the cooked angel hair and fresh parsley.

Not sure to how clean shrimp? Here's a step-by-step guide:

  • If you bought shrimp with heads on, carefully remove the head (some recipes do call for shrimp with heads on).
  • Remove the legs and shell.
  • You can remove the tail now or leave it on. That is based on personal preference and the recipe you are making.
  • Carefully run a sharp knife just on the surface of the back and rinse out the vein.

  • 12 ounces angel hair pasta
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 1/2 pounds uncooked shrimp, peeled and deveined
  • 1 teaspoon grated lemon zest
  • 1/4 cup lemon juice
  • 2 tablespoons minced fresh parsley

  • Fettuccine, linguine or spaghetti noodles could be substituted for the angel hair.

Here's how to make it: 

  1. Cook the pasta in boiling, salted water until al dente. Drain and set aside.
  2. While the pasta boils, heat the butter and olive oil in a large skillet over medium-high heat. Add the garlic and cook, stirring, for 30 seconds. Add the shrimp. Season with salt and pepper. Cook, stirring, for about 2 to 3 minutes or until shrimp are just cooked through. 
  3. Add the lemon zest and lemon juice. Stir.
  4. Add the cooked pasta and parsley. Toss to coat. Serve with lemon wedges, if desired.
